Kit-kats, Hershey bars, Skittles, and Jolly Ranchers. The reason these sweets, and many other products, are so popular is because of their sugar content. It’s hard to imagine that something used in nearly every food today was practically nonexistent at one point. But this is true- sugar wasn’t introduced globally until the 1500’s. Following this introduction, the trade that sprung up would come to be one of the most successful and profitable in the world. The Sugar Trade’s success was driven by many factors. Out of those several factors, the ones that promised success were high consumer demand, willing investors with a lot of capital, and the usage of slave labor.

Opening the refrigerator door, I locate two ingredients: eggs and butter. Grabbing the ingredients, I place them on the island sitting vertically in the middle of my rectangular kitchen. I then walk around the island to a cabinet to find baking powder and vanilla extract. Scanning and searching through all the spices and other items, I see the desired components. Finally, I walk across the kitchen to a cabinet standing high on my tippy toes because the protruding countertop makes the cabinet hard to reach. In this cabinet, I find the flour and sugar. I examine all of the goods on the island. The ingredients needed for a sugar cookie recipe, I have made countless times for the last five years.

There are plenty of sugary soft drinks in the market today. Sugary soft drinks are included as drinks defined by the US Department of Agriculture and the US Department of Health and Human Services in their Dietary Guidelines for Americans as “sugar-sweetened beverages” that contain different types of sugars that contribute calories. Examples of these are lemonade, sports drinks, energy drinks, carbonated sodas and sweetened teas and coffees (Marrow,2011).

Why would anyone feel the need to write an entire book on such a mundane topic such as sugar? Look around at some food products you might have and you will realize that many if not all of them contain sugar in some form or another. For example, a can of soda, which most people drink everyday, contains (depending on the brand) approximately 40 grams of sugars. Look further and you might find that even things such as cheese or chips or soup contain several grams of sugar in them. The wide diversification of products that contain sugar just goes to show you how widespread the use of sugar really is. This fact alone could be enough to convince someone to create a book solely about sugar. One passage that Mintz quotes on page 15 that really seems to capture our (Westerners) infatuation with sugar, and a strong reason the book at hand is as follows:
Humans, bears, and trees all have one thing in common, they all have atoms and molecules. They also need the four elements of life to survive, Carbon, Hydrogen, Oxygen and Nitrogen. (CHON) An atom is the smallest part of an element that is still that element. A molecule is two or more atoms joined and acting as a unit. There are four different types of molecules, they are, carbohydrates, lipids, proteins, and nucleic acids.
Flour, chocolate chips, a mixing bowl; these are some of the ingredients to make a batch of cookies. Most people believe the process is simple enough; you mix the ingredients to make the dough, and then bake until it becomes brown. I thought it would be near impossible to mess up until one fateful day. Who knew that making chocolate chip cookies would go so terribly wrong? I can say that this was definitely a memorable day in my life.
It wasn’t until the 1950s that sugar-free gum was introduced to the market (ICGA 2013). Sugar free gum is made with five basic ingredients. The gum base gives the gum a smooth texture and holds all the substances into one solid mass (Wrigley Jr. Company, 2012). The gum base is melted and purified before it is made into the gum (Wrigley Jr. Company, 2012). In Extra’s classic bubble flavored gum, the sweetening agent is sorbitol (Wrigley Jr. Company, 2012).
As everyone knows in order to be the best cookie, the cookie has to have amazing flavor. I asked my family members to volunteer and taste test each brand of cookies and rate them on a scale from one to three for their flavor. My family members ate each cookie and checked off which brand they preferred. The results show the brand of cookie with the best flavor was Keebler’s Original Soft Batch. Taste testers enjoyed the rich and smooth chocolate in the cookie. The cookie with the second best flavor was Chips Ahoy! brand cookies. Taste testers liked this cookies similarity to cookie dough, but did not enjoy the flavor as much as Keebler’s Original Soft Batch. The cookie with the worst flavor was the Cub Foods brand cookies because their taste was fake and stale. After looking at these results I found Americans prefer the flavor of Keebler’s Original Soft Batch cookies to have the best taste.
Then, move the bowl to the side. Take the bigger bowl and break three large eggs. Whisk the eggs briefly until they form a smooth yellow ingredient, then you will add the caster sugar and whisk until you have a thick light yellow substance which looks a bit like a thick milkshake. When lifting the whisk and the mixture it leaves a trail on the surface for a few seconds, and you know that the whisk has done the job.
