The chandler’s ship restaurant is private-dinner serving restaurant found in an old building located at gelderskade 8 street in Amsterdam. This restaurant is unique and different than the common restaurants found in the city of Amsterdam. Unlike the other restaurants, it is serves particular group of tourists. The setting of the restaurant and the way it operates also differ from other restaurants in the Amsterdam. For this and some other reasons, I have chosen the location to be the focus of my study. Therefore, this ethnographic study examines the uniqueness of the restaurant in general and the kind of people dining at that restaurant in particular. Firstly, The restaurant is old and staffs used in the restaurant are traditional too. In this way, it reflects the heritage of Dutch voyages and culture. Secondly, the restaurant is proving that traditional restaurants can still compete with the modern restaurants. The last and the most important thing about the restaurant is that ‘privacy’. Tourists or local officials are unlikely to get such restaurant, in Amsterdam, where they can get full service. In this restaurant, everything is arranged in the way they need it to be. They can discuss private issues without any disruption as if they are at their own home. Unlike other tourists, they are much of protocol and prefer to remain calm. They do not want to accompany their enjoyment by music or dance while having drinks. After having a trip outside and dinner at chandlers restaurant, the spent the rest of the evening discussing about business issues. They enjoy their stay at the city at the same time they reserve some time for business issues. Therefore, for them, the restaurant is not only place of recreation but also point where business issues are discussed and planned.
The other thing, I was able to learn from the study was that chandlers ship restaurant is one of the historical restaurants aims to reveal tradition of the Dutch people. Items kept in the restaurant gives different feelings to tourists. The artifacts may remind them things they know in history about voyages conducted from that area to different parts of the world. When walking into the lobby, one will be greeted with a smile and be treated like family. They have a lovely dining room, filled with old family photos, which creates a real homey feel. In the center of the dining room is a grand family table. It’s great for family seating or a big event. When taking young children to a restaurant, many customers have difficulties having children happy or calm.
One key design principle of this establishment was of a casual sit-in dining restaurant opposed to being seated with a server and menus, a person must order from the front. This cuts down on the time it takes a family to wait, settle in, wait, and then order off or a menu. Also the restaurant is spacious and has a lot of seating allowing for a rush of people with no problem. Another key design that governed that effectiveness of this process what the way the kitchen was mostly exposed and in the front. If you were sitting close to the front you could watch your food be prepared. I’m sure the cooks feel the extra pressure being under the watchful eye of the people whom the food belongs to. Another design principle that governs the effectiveness of the process in Jason’s Deli is the menu itself. The menu is pretty diverse but the one common denominator is that the food is recognized as healthy and made from the freshest ingredients possible. Finally I would add the self-servicing drink station is another key design principle because this cuts down on the time it take to wait for a waitress for a drink refill (if this were a formal restaurant).
One quality that is involved in a restaurant is the atmosphere and the positive energy it gives off. Considering the Western theme, they have the restaurant well decorated from the entrance, to the place where you sit. The walls are painted with tumbleweeds on them, with great lighting that allows you to see, and not go blind. The plates and silverware are very nice, as is the food that goes into them.
The Chinatown neighborhood has different restaurants, including a Korean and numerous Chinese restaurants. The Chinatown neighborhood has many gift stores, cosmetics stores, ice cream stores, and bakery. As Harry Kiang’s Chicago’s Chinatown points out, “Tourists shop for oriental gifts or groceries or enjoy Chinese food; along Wentworth Avenue between 22nd and 24th Streets there are at least 30 Chinese restaurants. Printers and bakeries are found in the commercial areas along Wentworth Avenue and Cermak Road” (Encyclopedia of Chicago). Many visitors came to the Chinatown neighborhood to visit the neighborhood and try the Chinese foods because it has the authentic Chinese food in the Chinese restaurants. Since many people came to the Chinatown and consumed in the neighborhood’s shops, the consumption promoted the local commercial development and increasing the economic growth. Within the Brookfield’s Restaurant organization there is a problem of having a high turnover rate, which is dependent on employee’s motivation as well as how much they feel they are involved in the company culture. Since the restaurant is a fast paced food service industry that requires employees to be capable of handling the pressure of dealing with many customers’ demands while also providing a high level of service to each guest which can be hard for many, making them less motivated to work. Also, the company culture is important by making the employees feel welcomed in the company and to help support them while on the job, so as to the employees want to stay on the job and not wanting to leave. We will provide an analysis showing employee’s work motivations and involvement in the company culture to determine if these factors are the cause of the high turnover rate.
The ethnographic study took place at McDonalds’ shop, Leeds, local market in the afternoon of Monday, 17th January 2011. From away I could observe the huge logo of McDonalds. I stood at the entrance and stared at the shop for few seconds. The shop was far more elegant than the average McDonald’s. The interior has a minimal style with posh chairs, tables, black art deco fixtures, beautiful paintings and attractive lights and draperies. There were large windows so it was impossible for customers to see into the Harvey Nichols store. Also, outside were window boxed filled with flowers or greenery. I could hear some relaxing music. At first glance, I noticed that customers were people with different age groups, genders, ethnic classes, social classes and cultural backgrounds. The language which was more spoken was English. The moment I stepped into El Milagro’s first door I saw a beautiful mural of a man, on the wall. The murals purpose was to display a man, who is wearing a white shirt and black jacket, riding a horse. There was also a woman in the mural, glancing at the man, with her finger in her mouth, as if she was admiring him (image shown on the page above on the right). Once inside of the restaurant I saw the bright colors, of the walls, such as the pink and yellow color pattern laid out around the dining facility - the ceiling and wall decorations gave the place a spacious atmosphere, along with the tables were set up in a way stretching from one end to the other end of the restaurant, in a way in which it contributed to the spacious atmosphere given the decorations on both the walls and the ceiling (as can be seen on the bottom left).
