According to Krishnan et al., (2017) halal issue is starting to influencing the awareness of consumer and market especially in the marketplace particularly in most Islamic countries. The awareness of consumer including non-muslim to purchased a halal product is raised due to some factors which are hygiene, quality, and safety of the product provided by a halal product. There are many issues that are related to the halal for example is gelatin. Gelatin is widely used in various industry because of its functionality especially in the food industry, pharmaceutical, cosmetic and photographic technology. The halal issue is raised when the gelatin that is used comes from prohibited sources such as pig, the animal that is not slaughter follow by shariah law such as bovine. Then, the number of the establishment of livestock also increases 8.1% CAGR from 2010 to 2015 which is 1,089 to 1,604 respectively. The term of CAGR stands for the compound annual growth rate that is a useful measure of growth over multiple time periods. So, the production of the poultry can be fully utilized by making it as a source of gelatin.
As a substitution sources of gelatin, quail bone is one of the suitable sources of gelatin. Quail is one of the poultry types that are rarely consumed by people and the meat usually eaten by fried the meat. Its belong to a biological family of chicken and pheasants (Phasianidae) with a small to medium size birds (Boni, Nurul, & Noryati, 2010).
