Macarons are thin French cookies with flavorful meringue and sandwiched together with some filling. The meringues within the cookies is what makes it special. Macaron shells have a smooth, crisp top and a moist chewy interior. Macarons come in any size or shape, but are typically small enough to be eaten in one or two bites. To make the perfect macaron you must ensure that you have the correct ingredients, prepare the batter correctly, wait the time indicated, bake properly, prepare filling, and combine all ingredients for completed macaron. The longer you wait, the better the result. It is crucial to wait the indicated amount of time to make macarons. If you do not wait for the macarons to dry before placing them into the oven, the macarons will come out gooey in the middle and rock hard on the outside. This process allows for the shell to harden, take shape and release any remaining gas bubbles. While waiting for the shells, preheat the oven to 300 degrees and make sure there is a rack in the lower third. In order to check if the macaron shell is ready to be baked, lightly touch the surface of the shell with one finger. If batter comes up or if the shells still feels wet the shells are not ready to be baked. If the shells are hard and not wet or gooey they are ready to be baked. When the oven is set and the shells have been sitting for the time indicated, it is ready to be baked. Bake 1 sheet (pan) at a time for 10 to 15 minutes. Usually 13 minutes is the perfect baking time. If the shells are baked correctly there will not be any batter and the shell should be able to slide of the parchment paper without ripping it off. If it needs to be ripped off then the shells are not fully baked and there probably is still batter in the center.
