Paleo Chicken soup with cashews
Paleo chicken soup is a perfect soup for people who want a healthy lifestyle.
Ingredients:
Grated fresh ginger (1 tablespoon)
Chicken broth (6 cups)
Stemmed kale torn into pieces (1 bunch)
Salt
Pepper
Coconut oil (2 tablespoons)
Cubed and sliced chicken breast (8 ounces)
Creamy cashew butter (1/2 cup)
Thinly sliced shallots (3)
Cayenne pepper (1/4 teaspoon)
Medium sized Pumpkin sliced into chunks (1/2)
Crushed cashews (1.5 ounces)
Diced tomatoes (1 ½ cups)
Minced garlic (3 cloves)
Directions:
Under medium heat, sauté the oil in a crock pot. Add shallots, cook until they become brownish. Lower heat, add cayenne, garlic, and ginger and cook for a minute. Add the chicken breast and cook until it begins to color. Add four cups of chicken broth, let it boil, and let it simmer. Add the squash, kale and tomatoes, then simmer whilst stirring every now and then, until vegetables become tender and chickens becomes cooked. Mix some of your broth with the cashews, and stir it to the soup. Add some salt and pepper. Garnish with cashews.
Prep: 5 to 10 minutes
Cook: 2 to 3 hours

Ingredients:
Garlic (3 large cloves)
Apple cider vinegar (1 tablespoon)
Chipotle adobo sauce (1 cup)
Diced small white onion (1)
Ground cloves (1/2 teaspoon)
Beef brisket (4 pounds)
Oregano (2 teaspoons)
Bay leaves (2)
Beef stock (2 cups)
Directions:
Using a blender or food processor, mix all of the ingredients except the beef and bay leaves. Place about ¼ of the mixture into the bottom of a crock pot. Place the brisket in the crock pot, above the mixture, with the fat side facing the bottom. Pour the left mixture into the crock pot. Cook under low heat for 8 hours. Remove the brisket and place into a plate. Shred the meat from the brisket. Place the shredded meats into bowls and add some of the liquid from the crock pot.
Prep: 10 to 20 minutes
Cook: 8 hours
The last step of this recipe is waiting. The master pot should be left on low heat for about one hour and a half to two hours while stirring consistently to prevent sticking or burning to the edges of the pan. The sauce can be thinned if too thick by simply adding some more, you guessed it, chicken stock. When the sauce is done, my grandmother usually puts some salt and pours it on some cooked chicken with rice on the sides. Once the berry mixture has boiled, pour the sugar and pectin mixture into the pot. Using the wooden spoon, immediately start to stir the jam and continue to stir until all the sugar is dissolved.
