Well-honed psychological lines of defense had been fully developed by this point in his life, and he was certain his new friends could relate. Appreciating his company, and accepting him into the culture, the black servers, both from local communities and from other countries became his ally. If anything, he treated him worse, as he was new to the kitchen, and easy to bully. When testing recipes, Luigi would run Japes all over the kitchen to gather ingredients. He would make him shell shrimp or chop vegetables endlessly just to show he was in charge. “Dice the vegetables like this on a slant. I want them exactly the same size. Then devein the shrimp like this. Let's go.” Luigi barked “Why like that?” asked Japes. “Just do it and do it fast” snorted the overweight bully. He was like a dog marking around his territory, so nobody would enter. Many of the servers loved getting Luigi's dander up. Neville, a former convict, was the only cook at his station. He was cool and he did a great job, both he and Japes realized they were in a predicament. The pub needed to be open in just fifteen minutes and they were under the gun. The other cook, Mike, arrived late, so Japes’ asked him if he could help set up his station. Mike gave him a blank look and started to turn on his grills. Mike was a young server that never said too much; he appeared to be reliable and rather likable. Japes said to Neville and Mike “Oh boy, we need to move fast”. The pub doors were about to open, and the crowd would be rushing in. Mike leaped over the counter with a ten-inch French knife and pushed him up against the wall. “Who the hell are you calling a boy!” yelled Mike. Japes’ was petrified. Neville took Mike's arm and pulled him back. Neville said “He did not call anyone boy it was just an expression”. Incensed by this misunderstanding, Mike nearly cut Japes with an uncontrollable urge to strike out. Neville saved him from some serious injury and thought nothing of it. He regularly drank with Japes and the gang on Friday nights, and he knew Japes was not a bigot. His bosses blew off the incident as if it was nothing.
