Many foods we eat contain a common ingredient called gluten. Gluten is a protein that binds ingredients together and gives food its texture. About 1% of the United State’s population has an autoimmune disease called celiac disease. This percentage does not include those who are undiagnosed, wheat sensitive, or misdiagnosed. Celiac disease causes severe symptoms to the person when gluten is ingested. Therefore, the only way to treat it is to maintain a strictly ‘gluten-free’ regime. Maintaining this lifestyle is extremely difficult. Celiac disease is unknown to most of society. Many people do not understand what people who have it go through. Due to the lack of awareness, many people who have celiac disease often struggle with social situations on a daily basis. Celiac disease and wheat sensitivity possesses social and economic struggles for individuals conflicted with it and their families.
There is no known cause for celiac disease. Most people who have celiac disease inherit it from a family member who had it or had it congenitally. Others experience symptoms “following surgery or a viral infection, or after severe emotional stress” (Gale Encyclopedia 3). Pregnancy and/or childbirth can also trigger it. Celiac disease is an autoimmune disease and a “chronic digestive disease” which affects the small intestine when gluten is ingested (Gluten-Free diet 3) . You may wonder what gluten is. Gluten is a common ingredient in foods that primarily are made of “wheat, barley, rye and their derivatives.” (Webb 1). When an undiagnosed person with celiac disease eats something containing gluten, symptoms appear and unseen problems within the digestive tract occur. People with celiac disease face social hardships in public places and within their families. Based on personal experience, going out to dinner or on any sort of outing is not as simple for my family as it is for others. My mother has celiac disease. Therefore, before we go out to a restaurant or on vacations, my family makes certain accommodations for my mother. Some may consist of looking up restaurants with gluten free options or finding supermarkets that carry gluten free foods in our area. Since my mother’s diagnosis about 9 years ago, we have not gone out to eat as much as we used to. This way, the risk of my mother being contaminated decreases. Many people with celiac disease view going out in public as a stressful situation. This is due to the lack of public awareness.
