On average two new brews are released in the taproom every month as the varietals rotate through the menu alongside the permanent offerings that are the flagship beers (Graffiti House West Coast Style IPA, Gold Cup Russian Imperial Stout, Chukker Czech Style Pilsner and six others). What the separation of production and tasting areas also accomplishes is to allow the area not to take on solely the aura of a drinking establishment. Two Silos Brewing company in Bristow is the centerpiece of the large Farm Brew Live campus at the high traffic intersection of Routes 28 and 234, three miles south of Manassas Town Center. It is a venue with a brewery anchor, but its growing set of offerings (new distillery and restaurant opening in 2018) lift it to a different level of the sector that our other brewers. As described on the website, “Farm Brew LIVE is an ideal venue for private parties, receptions, weddings, corporate and convention groups, holiday parties, celebrations and many other events. There are many options for event space on the campus to accommodate intimate private dining to large gatherings and everything in between.” Two Silos began operations at its present location in 2017, and brews strictly for Tap Room and carry out customers. They may brew for a wider market in the future once the core business is more established. The tasting room is the largest of the ones visited by Group Four this year, and as is the case in all but OBH, the brewing process is featured in the décor. Capacity at the campus is the largest of the brewers sampled, and the long-serving hours give testament to the focus on the tasting room and entertainment options. Like OBH, Wort Hog Brewing Company takes advantage of a re-purposed building, having devoted some of the $2.5M initial investment to the conversion of a long-closed commercial garage one block south of the main street. Wort Hog’s brewing capacity is approximately 50% of that of Bust Head, and the 4 main hospitality areas (roof-top, mezzanine, patio and main tap room/bar) can accommodate nearly three-hundred patrons. Wort Hog’s current production is sufficient to supply a growing number of local restaurant/bar taps, but no bottled beers are expected to be produced until the facility is expanded. Food is available through an on-site barbecue sub-contract, but phase two of the facility includes a kitchen to allow an expanded food service operation. As is the case for all brewers we spoke to, the number one goal of Wort Hog’s production team is the consistency of the product. The brew master is Jeremy Hunt, and he has succeeded at some of the nation’s most highly regarded brewers. These include Deep Ellum in Dallas, and Ipswich Ale Brewery on Boston’s north shore (25K BBL annual production ).
