Basic Chocolate truffles:
• 8 ounces of semi-sweet or bittersweet chocolate (high quality, 60% cacao or higher) , well chopped in fine pieces(You can also choose white or milk chocolate)
• 2 cups of heavy whipping cream
• 1 1/2 teaspoon of vanilla extract

Alternative flavourings base
• Mint leaves ( ½ bunch, stems removed, chopped)

• If you are using any other of flavourings of your choice, stir it in with the cream (and ignore vanilla in the next step). If adding mint or other solid ingredient, after the cream simmers, remove from heat and let it set for an hour. Then strain any existing solids, and return the cream to a simmer and go ahead with the recipe

• Keep chocolate in a separate bowl. Pour the cream over the chocolate, add the vanilla, and allow it to stand for 2 -3 minutes then stir until smooth. (This thick chocolate mixture becomes your ganache)

• Allow the mixture to cool, and then allow it to set in the refrigerator till its firm enough to form balls without melting. Remove and with a teaspoon roll out medium sized balls of the ganache. Roll in your hands quickly (as it has a possibility of melting due to the heat of your hands) and place it on a clean baking sheet lined with parchment paper or silpat. Freeze it in the refrigerator till the ganache balls
