French Fascination With Food
The delicacy of French cuisine, the diet du jour, a multiple sensory experience, wine, chocolate mousse, cheese. When one thinks of French cuisine, these are some of the aspects that run through our minds. The attraction to French food and the culture that presumes around it are what make French dinning so appeasing to the masses. Yet, when one thinks about the sensual delight of French cuisine and its affect no one would ever guess that the French cuisine, in all its glory, would be associated with concepts such as international technology availability, French agricultural research expenditures, or sustainable agriculture. But without concepts such as these, the availability of quality French food would be sparse.
It is true that the ingredients of French cuisine are of the freshest, but those ingredients are at the center of a more important concept: French agriculture. French agriculture is associated with production disaggregated among cereals, non-cereal crops, milk, and animal products. France’s prices of these products, like real- cereal, have shown a dramatic decline amongst other prices over a sharp period of time. With declining prices of output products, there come important implications for both agricultural trade negotiations and for agricultural research policies in Europe and also the United States.(Bouchet,et.al.,1989)

A true love of food isn’t born through watching culinary television programs, or cooking with a grandmother during the holidays. It doesn’t stem from enjoying eating, or hosting parties. A true love of food in my eyes is defined as a lifelong relationship with food in numerous capacities. A relationship filled with all of the discovery, strife, forgiveness, and understanding one might find in a committed human affair. All of which are underlined by a deep current of simultaneously inquisitive and euphoric obsession. Without these qualities, one can expect their relationship to food to remain as thin and tasteless as a Sunday morning communion wafer. I describe a superficial connection to food in this particularly blunt fashion because I care about food in such an intimate way. Though my words may imply some sort of exclusionary zealotry regarding food, they are not meant to convey that an interest in food is a bad thing. Now, the farms of the past have been replaced by industrialized growing operations that emphasize quantity over quality. As a result, the small farms of the past could no longer compete. Generally, technological change in agriculture can be categorized as labor-intensive and capital-intensive system or it can be yield-increasing with affecting labour or capital intensity. Therefore, the impact of technological change in these directions become more complex and would have positive or negative impact depending on how much the agent is constrained in respective resources, to what extent market is imperfect to balance resource constraints, and what other institutional factors influences the movement of resource from intensive and extensive agricultural margins (Angelsen & Kaimowitz, 2001). Market or policies that increase output price or reduce input cost also found to have a contrary or minor impact in reducing crop land expansion. On one hand, profitability of agriculture could encourage farmer to use improved input and increase yield or it could create incentive to clear forest for additional production. Thus, the outcome depends on the availability of labour and land. Technological improvements and productivity gains potentially also make the agricultural activity more profitable and thus more attractive, resulting in an increase in total agricultural land rather than a reduction (Lambin & Meyfroidt, 2011) contrary to most of the theoretical assumptions. An increase in input price could have both effects on one hand, reduce the profitability of agriculture and hence, the area allocated to farming. On the other hand, farmers could replace fertilizer with other input, land, through expansion. Besides, access to credit or lower interest rate for capital also found to have resulted in expansion of land through relaxing farmers’ capital constraints. They indeed promote biodiversity, avoiding the use of any chemicals, while producing year-round yields. Agroecology recognizes the successfulness, proven over centuries, of community-based local agriculture, and thus serves as a bridge between modern scientific agricultural knowledge and local ones. The local management of resources and knowledge systems is elaborated upon social institutions. It is then of primal importance to identify and assess this local knowledge framework through agroecological and ethno ecological methodologies. This will help determine the factors upon which the famers perceive and modify their environment to finally translate into practical management schemes promoting the dynamic conservation of local agroecosystems. The combination of western science and ethno science provides then the principles to design and manage sustainable farming systems. Participation of farmers in testing, evaluating and disseminating the best agroecological practices is needed to ensure that the specific technologies put into places are really relevant to their needs and situation (Altieri,
