1.Introduction: a.Demographics: Hawaii’s population consists of 1.42 million people. This state is predominately made up of Asians, with Caucasians following and then native or pacific islanders, Hispanic and other ethnicities. Only a mere 41.3% of people in Hawaii are religious, with 18% of those being of the Catholic faith. The average income a person makes in Hawaii is $46,034 per year. b. Education In Hawaii, only one in six adults cannot read or write at a basic level. This accounts for 236, 667 people in Hawaii being unable to read or write at a basic level. The fruits provide nutrient density, while lau lau provides a good source of protein without adding a lot of salt or added calories. Culturally acceptable foods that should be modified include poi, pipilaula, poke, and breadfruit. Poi should be modified to add fruit instead of added sugar, in order to lower the total sugar content. Pipilaula should be limited due to the use of salt and sweetener. If you remove the additional items, it could potentially alter the dish to where it doesn’t taste similar to the original dish. Poke is another dish that should be limited, due to the overuse of sodium throughout the entire dish. If you chose to remove the items that add the sodium, like soy sauce, it would alter the dish to where it isn’t the same as the culturally acceptable dish. Breadfruit is a dish that can, and should, be modified. Instead of sauteing it in butter, you can saute it in olive oil or vegetable oil, while also adding cheese on top. While it can be a modified dish, it should be limited because breadfruit is a “heavy” dish that does not provide a lot of nutritional
