Pasteurized or Raw? Burkhard Bilger, the author of the essay “Raw Faith”, uses several literary elements. The main elements that Bilger focuses on logos, pathos, and tone. He hones in on the details concerning different types of cheeses and how the economy and cultural forces have shaped the artisanal cheese industry in the United States of America throughout the centuries.
Throughout the essay Bilger brought up many specific components. The first piece he includes is about The Cheese Nun. Known in her Abbey as Mother Noella, earned a doctorate in microbiology from the University of Connecticut. Focusing her research on the positive effects of decay and putrefaction as well as the odors and flavors of cheese. Bilger’s language towards Mother Noella is very genuine, and proper - Proper in the sense that he wants to showcase her achievements:
“In 1985, she took her final vows to remain at Regina Laudis for the rest of her life, earning the title of Mother. Yet her secular interests have only widened and deepened over the years. This winter she is completing a Ph.D. in microbiology, even as she helps shepherd the country through a culture war of an unusual sort: a war of cheese” (Bilger 309).

The essay establishes the existing United States regulations, which is a huge result of many medical incidents which the federal and state government analyzes for the safety of the people, whom have many concerns that are placed upon raw milk cheese. In the dairy, Martha Ballard talks about her daily life as a midwife. Martha Ballard was one of the midwives during her era that helped with many medical related problems around the community. A Midwife’s Tale provides insight into eighteenth century medicine by showing the importance of a midwife through a firsthand account of Martha Ballard and by indicating the shift of medicine from being underdeveloped into becoming a more developed field.

When produced from a grass fed, healthy, clean animal, unpasteurized milk is a completely safe alternative to pasteurized milk. Raw milk has not been pasteurized or homogenized, it has more nutritional value considering it has not been heated to kill of pathogens (Imus). Raw milk is only unsafe when it comes from overproduced factory cattle. These cattle are in the wrong conditions for healthy milk production (“The Industrial Milk Factory”). It should be legal to sell unpasteurized milk in the local community. The buying, selling, and distribution of pasteurized milk would help boost the local economy and it would also help the local citizens make ends meet. It is much healthier and safer to know where your milk is coming from, rather than to buy it from a larger chain store.
Throughout the essay, Berry logically progresses from stating the problem of the consumer’s ignorance and the manipulative food industry that plays into that ignorance, to stating his solution where consumers can take part in the agricultural process and alter how they think about eating in order to take pleasure in it. He effectively uses appeals to emotion and common values to convince the reader that this is an important issue and make her realize that she needs to wake up and change what she is doing. By using appeals to pathos, logos, and ethos, Berry creates a strong argument to make his point and get people to change how they attain and eat food.
Our protagonist, Eleanor, is nurturing, attentive, and full of love. She states she is drawn to weaknesses in her husband, and frequently shows that she enjoys simply loving and looking out for others. Protective and strong, she the perfect example of a good mother.

Food production was moving from household prepared to general markets. As food markets became more refined due to the improvement of technology. The difficulty in discerning the quality of their product heightened. With new and quicker ways make food, fears of the ingredients that the foods consisted grew. Edna lives with the knowledge that she is not a “woman-mother”. Her own husband chides her for not paying more attention to the children.
