Food is a substance that provides health benefits, including the prevention and treatment of diseases, as well as nutritional value. It is usually of plant or animal origin, and contains essential nutrients such as fats, proteins, vitamins, or minerals. The accomplishment of good nutrition encompasses the complete food supply. The practices of using certain foods or plants for the prevention or treatment of diseases in human societies have originated far back in time. Charaka samhita is the foundation of modern day Ayurveda, a traditional system of Indian medication which relies heavily on foods and herbs with medicinal qualities to heal the malfunctioning of the body (Paliyath et al, 2011) [1]. It holds the key to increase our understanding of the roots of many diseases and thus holds promise to markedly influence global health. Thus, the source for answers to larger health-related issues which will allow individuals to live improved, more healthier lives lies in innovative nutrition research and education (Ohlhorst et al., 2013)[2].
The nutrition and health module principally focuses on the nutritional significance of energy, the macronutrients and the micronutrients in the body and their sources in the diet. It looks at the relationships between food, health and disease . Nutrition plays a causative role in contributing to the development and progression of the major chronic diseases such as diabetes, cancer, atherosclerosis, cardiovascular disease, and neurodegenerative diseases (Lillycrop and Burdge., 2012; Virmani et al., 2006)[3-4]. Nutritional deficiency and disease, especially lack of vitamins and minerals, were well known and associated with specific disease conditions, e.g., lack of vitamin C was associated with scurvy, niacin (vitamin B3) with pellagra, etc. (Jukes., 1989)[5].
