I tried an easy taco salad recipe I got from the food program on PBS. I had tomatoes, onions and lettuce from my garden that were already sliced and diced for the salad. I fried a pound of hamburger and crumbled it up before adding it to the vegetable mixture. I added a pound of diced cheddar cheese and tossed the whole thing for 5 minutes. It was ready to be portioned out into taco shell bowls and topped with salsa and sour cream. On the side I had avocado ranch dressing and Catalina dressing. This can also be made with chicken instead of beef.

Everyone in my beginning cooking class had to prepare a dish for the final exam; if it was edible, we passed. I figured as long as I didn't make anybody sick I would be ahead of the game. There were 20 of us and we had to choose our recipe from the instructor’s hat. I picked a taco salad recipe which was not too bad. If worse came to worse I could stop by the Taco Shop and get a salad on my way to class next week. I bought the lettuce, tomatoes and beef for the salad and began to prepare the ingredients the day before the last class. It turned out pretty good and the whole thing was eaten.

I have a taco salad recipe that calls for ground beef or chicken, but I needed one for a vegetarian guest that was coming to visit. My cousin gave me a recipe that uses 3 cups of tortilla chips and 2 cans of hot chili beans. I used American shredded cheese and salsa with plain Greek yogurt to top the shredded Romaine lettuce and diced tomatoes. Optional items included black olives, fried corn, guacamole, lentils and pineapple. I tried it out on my family, and they liked it and asked for seconds. I hope this recipe will be a hit for years to come, because it is so easy to make.
