When to make pumpkin chocolate chip cookies- I recommend a cool, fall day when you have the windows open so you can feel the breeze and hear the leaves crumpling in the wind. The breeze will pass through your kitchen and bring the scent of warm pumpkin chocolate chip cookies throughout the house. Not only will that make everyone hungry for cookies but it will make your house feel like a home. There is nothing better then the smell of a homemade treat in your own house.

Depending on the pumpkin you are using you may need a can opener to open the canned pumpkin. Once you open the can, measure out 1 cup of pumpkin. Place the pumpkin in one of the bowls along with 1 cup of white sugar, 1/2 cup of vegetable oil, 1 tablespoon of vanilla and 1 large egg. I highly recommend you use a farm, fresh chicken egg, once you use/eat fresh eggs you will never want to have another egg bought from a grocery store. I use milk chocolate chips but you can use whatever kind of chocolate you want and of course you can put more then 2 cups in them. Mix them in the cookie dough so the chocolate is scattered through evenly. Once you have the mix full of chocolate chips grab your cookie sheet and spray it down with the non stick spray. Now you have that ready you can start placing little mound of dough on the sheet. Place each one about 2-3 inches away from each other so they don't stick together when they are baking. If you're using a basic cookie sheet you can usually have about 6-8 cookies going at a time, depending on how big you make them. By this time, the oven should have beeped once or twice saying it is done pre-heating. Place the cookie sheet with cookies in the oven for about 10-12 minutes, no longer then 15 though or you will have pumpkin chocolate chip hockey pucks. I learned the hard way the first time. You will want to use a toothpick after 12 minutes to poke the center of the cookie to make sure the dough is cooked. Be careful with these cookies because they will look like they aren’t cooked all the way but they are, they look like little biscuits almost. Once the first batch is done use a spatula and take the cookies off and place them on a cooling rack or a plate to cool. Then restart the process with the rest of the dough.
