Introduction

Malaysia’s food industry is rich in varieties due to the diversified cultures among Malaysian’s society which consist of Chinese, Indian, Malay and many other races. The togetherness of Malaysians and willingness to unite has resulted in a fascinating range of processed food with an Asian’s taste. However, the food industry also has to take the healthiness of food into consideration. Thus to increase consumer awareness, the nutrition value and food protection for healthcare has created. Food processing is known as the methods or ways used to convert raw ingredients into food for consumption by living beings. Based on the table, there is an increment in overall production of processed food according to year 2009 and 2010. The highest production is dried processed food with a production of 848.8 (in 1000 tons).The reason is because Malaysia is popular in exports of dried processed food to neighboring countries and also to certain Europe countries. On the other hand, the largest increment is the production of pasta. The increase of 6.67% shows that manufacturing of pasta increases the most compared to other products. The factor is because pasta has become one of the most popular food among Malaysians and this phenomena lead to increase in production of pasta. The lowest increment as well as the lowest production is snack bars with respective amount of 0% and 0.2 (in 1000 tons). This is due to lack of support from the locals. Most Malaysians prefer overseas snack bars compared to the snack bars produced locally, hence lead to a low production of this product. Lastly, product such as baby food, dairy, indulgence products, nutrition and packaged food showed no production. These basic food processing involves the usage of very little chemical enzymatic that lead to minimal changes to the basic structure of food. Hence, the food may remain in its natural form. Salt-preservation was very important for older day soldier and marine during war until canning method were introduced.
