Collection and processing of raw ingredients
Two nutritionally superior millets, namely ragi and barnyard millet were selected as major ingredients and were collected from the wholesale market. The millets were cleaned and malted after soaking in water for 10 hrs followed by germination for 24 hrs. The germinated millets were then roasted, powdered and sieved to get a uniform flour. Twenty five per cent of the total ingredients were fixed as protein source (PS) (Wheat flour- 10%, Defatted soya flour -10%, Skimmed milk powder - 5%) of the composite mix in all the treatments and were collected from the local market. Garden cress seeds were the functional ingredients used in the nutrimixes and incorporated at 5 per cent and 10 per cent levels …show more content…

All the treatments were subjected to organoleptic evaluation. Nutritionally superior treatments like T2, T6 and T8obtained higher scores of 7.3, 8.2 and 7.4 respectively. T6 obtained the highest organoleptic scores and its nutritional qualities were almost comparable to T2.

Hence, considering superior organoleptic and nutritional qualities, T6 (55%MRF+ 25%PS+ 5%S+ 5%MBF+ 10%GCS) was found to be the best combination.

Millets play an important role in the development of value added products. Snehal et al. (2012) developed a drink with 30 per cent garden cress seed powder, skimmed milk and sugar was found to be highly acceptable with an overall consumer acceptability of 8.75.
Parvathy et al. (2015) developed nutrient rich health mix, which was suitable for all age groups and the overall composite score for acceptability of the health mix was 8.3.

Conclusion
Adolescence is the most vulnerable period in human life cycle. Nutrition plays a vital role in achieving growth and development required for this stage of life. The present study concluded that nutrient rich nutrimix combinations can be formulated as supplementary foods for adolescents. The developed nutrimix was superior in nutritional qualities and was highly acceptable. Minor millets can be effectively utilised for the development of supplementary foods. The developed nutrimix can be popularized to combat malnutrition among
