As if deciding on what to make for dinner was not already a difficult decision enough. With that decision comes how to cook the main dish along with any side dishes or dessert there may be. There are many options to choose from based on how you would like to prepare all the different type of varieties of food, whether it is dessert, vegetables, fish or meat. Each of these cooking methods fall into a main category based on a type of heat that will be applied along with which kitchen appliances will be used. The main categories for cooking are; dry heat cooking, moist heat cooking, and lastly combination cooking.
Dry heat cooking is the main category for sautéing, roasting, baking, broiling, and grilling. When it comes to cooking with dry heat, the heat needs to be in direct contact with the product you are using. These cooking methods are known as stewing, braising and sous vide. All three of these methods calls for a low heat setting over a long period of time in order for the product to be cooked perfectly. They are especially great when it comes to cooking meat, helps even the toughest meat turn tender and juicy when cooked just right. When braising food, it is first cooked in dry heat by sautéing it or searing it to caramelize the outside or add a slight crust to it. Then liquid such as a stock is added inside the pan with the food still in it, it is then placed inside an oven or left on the stove top to continue to cook the interior until done. Stewing calls for the product to be fully immersed in a liquid. Sous vide is a method used when food needs to be cooked for a long period of time but at a low temperature.
