Cooking from West Africa
Hundreds of years ago the empires of West Africa flourished and expanded through trade on the edge of the Sahara desert. Today, these lands are occupied by modern nations after a long and brutal history throughout the lands of Africa. Stretching from Senegal to Nigeria, these lands are rich in resources, ranging from wet coastal rain forests to the Sahel at the edge of the desert. Along with expansion came the foods of the region of West Africa, which are rich in flavor and reveal the wonderful diversity of African cuisine. The land south of the Sahara is full of history and contains a full array of foods, revealing the culture and creativity of the vast resources that encompass the land (Jackson 3).
West Africa encompasses a wide band south from the Sahara Desert to the coast of the Atlantic Ocean, with very different climates accordingly. Ancient traders would make frequent journeys across the desert to exchange salt and spices for gold, along with ivory and slaves in the south. The Empires of Ghana, Mali, and Songhai expanded and flourished as a result of the trans-Saharan trade. This trade was crucial for West Africa and for many years this trade was the only interaction West Africa had with the rest of the world (Jackson 8).

In documents one and two they explain and evaluate the trading system and routes of the African empires, kingdoms, and cities. Document one shows the layout of the Aksum trade center and the routes which lead to and from it. Aksum is an empire located right by the Red Sea, its location made it an important international trading center. African trade centers mainly focused on the exchanges of salt and gold. Since the red sea ports are controlled by the rea sea and Aksum was located right by it, its locations made it the center of the trade center. ...e, unlike the surrounding nations which were powerful, rich empires, Africa consisted of small tribes and kingdoms. These kingdoms’ greatest exports would consist of gold, salt, and slaves, in exchange for the goods imported from the surrounding empires.
African society used bodies of water such as the Nile, the Red Sea, and many more to transport goods across the continent and generate profit. For example, the city of “Aksum reached its height between 325-360. Aksum’s location made it an important international trading center.” After analyzing the map of trade routes in Document 1, it is clear Aksum was strategically built to have ties to the Red Sea and the Gulf of Aden. These two bodies of water give the city the freedom to import and export goods. Additionally, this work of trade did not come without reward. Cities who succeeded in the business became overly wealthy and had surpluses of gold and other riches. A king, Mansa Mansa, who expanded the Mali kingdom to be twice the size of Ghana, was not afraid to show his wealth as he showered other cities in riches out of generosity. In Cairo, Egypt, “there was no person, officer of the court, or holder of any office of the Sultanate who did not receive a sum of gold from him.” This is just one of the many examples of wealth in african cities and empires. As the world of trade developed over time, goods were not the only things that were traded throughout these routes. With the merchants that traveled the world, were the ideals and religions that had learned from foreign lands, and the major religions of Christianity, Islam, and Buddhism, spread like wildfire throughout the regions of Eurasia and Africa because of this. The spread of Islam throughout the continent of Africa acted as a major influence both politically and socially. After 1600, Islam began to make its mark on the newly centralized states in Africa and was spread through western land trade, and through merchants on the Swahili coast. Michael Twitty is a food writer and culinary historian best known for preparing, preserving and promoting African American food ways and its origins in Africa. He emphasizes how African food culture has made a great impact on the American South. His cooking helped him to learn about his identity and culture. He describes “identity cooking” a way to better understand him and his culture as a Jewish-African American. Looking at the scholarship on Africa, Davidson reminds us that most published history is dominated by the colonial and post-colonial periods rather than pre-colonial as it is difficult to research. Moreover, the extent of languages, rare or non-existent sources including the need for professional services such as archaeological and geographic surveys are expensive and can over extend budgets for research. Davidson’s passion for communicating and informing the public about the great kingdoms of West Africa and its history is a fantastic and well thought out production.
In the great empires of Africa they developed many things. In the Axum (Aksum) Empire (Ethiopia, in present time) they developed a trade route that stretched of Asia to Africa and back. Document one, states that people in the trade route traveled along the Red Sea. This affected the Axum Empire in many ways. They (Axum people) had gained wealth because it was a great trade point and from it, it was introduced to religions, Christianity and Islam. Another empire is called the Kingdom of Ghana in Western Africa. They became one of the richest civilizations due to commerce. In document two, it states that the amount of wealth was visible because of what the pages were wearing. They had on gold. Even the dogs guarding had on silver and gold.
Now we all know that Africa is some of the most fertile, lush land in the world. Africa abounds with game and almost any type of fruit and berries imaginable. The actual deserts in Africa are quite small, and those images of starving African Negroes you see on your TV is only a very tiny portion of Africa's vast abundance. Any geography professor will tell you this, and they will tell you it has been like this for millennia.
The concept of the slave trade came about in the 1430’s, when the Portuguese came to Africa in search of gold (not slaves). They traded copper ware, cloth, tools, wine, horses and later, guns and ammunition with African kingdoms in exchange for ivory, pepper, and gold (which were prized in Europe). There was not a very large demand for slaves in Europe, but the Portuguese realized that they could get a good profit from transporting slaves along the African coast from trading post to trading post. The slaves were bought greedily by Muslim merchants, who used them on the trans-Sahara trade routes and sold them in the Islamic Empire. The Portuguese continued to collect slaves from the whole west side of Africa, all the way down to the Cape of Good Hope (South Africa), and up the east side, traveling as far as Somalia. Before the slave trade began, Europeans had ideas about Africa, before discovery, which varied with “time and pace” (Davidson, 23). Africa was extremely foreign to Europe, as the only information they has was from a memoir written by a traveler titled “Inner Africa” in 1447. The information in the memoir is known as “caravan gossip” which was picked up by a traveler named Antonio Malfante, was wildly untrue. Malfante told Europeans that in the south of Tuat and the deserts surrunding Tuate: “there are black people who have innumerable great cities and territories” (Davidson, 24). He explained further that Africans were “carnal, and “act like beasts” he even told some that they were cannibals. It is because of these sorts of misconceptions lead on by “travelers” like Malfante, that Europeans built false understandings of places less traveled, like Africa.
Ghana’s land was full of resources, but iron, gold, and salt were the most important. Starting with gold, Ghana traded gold for most of what they needed as they had so much gold even their dogs wore gold collars. Ghana used gold to trade with other nations to get resources like livestock, tools and cloth. Ghana traded gold because they had so much of it the following was iron. Ghana used iron for strong weapons that they used in battle and tools that helped them live. Iron made items that helped Ghana become stronger. Iron helped Ghana a lot, but not as much as gold. Foods from Africa, which have impacted North American cuisine are numerous, and common in the everyday eating habits of Americans. In the 21st century, Americans take for granted the history of the food they eat, and the origins of the foods that are eaten today. In the early part of the history of the United States, people of European descent brought recipes from home and adapted their recipes to the ingredients which were available. The slave trade was directly responsible for what many Americans think of as American food, and those foods are traceable to Africa. African cuisine is divided into, North, West, Central Africa, Horn of Africa, South, and East Africa. The Northern area consists a lot of historical and political events, which can be traced back to Egyptian history. On the West side of Africa, they are heavier on the spices, starch food items, meats, and flavors. In Central Africa, the tradition of cooking their food remains untouched by influences from other cuisines. They like to eat game meats, such as crocodile, warthog, monkey, and antelope. The horn of Africa’s traditional dishes are more on stews served in flat like bread, known as injera. The South is also known as a rainbow cuisine because of its many influences from other countries. Milk is one of the most important ingredient of the South Africans. Then we have the East African cuisine changes from area to area around it.
...African culture encompassed food as a part of their traditions and way of life not only as a source of nutrition but also as a source for medicine to heal common ailments and seek favor from God through offerings. Modern day African culture has however been permeated and has incorporated many other traditions and methods of preparation from other countries. This does not however mean that it has been completely eroded, and many parts of Africa still consume indigenous foods that they get through subsistence farming for their individual nutritional needs.
