When someone look at a Chinese restaurant’s menu, he or she may think what shows on the menu is same as the food everyone eats in China; in fact, it is a misunderstanding. China is a vast country with various landscapes and diverse ethnics with their different traditions; also, because of the long history China has, countless times of wars, explosions, and migrations has brought changes to different parts of China. As time passed, different habits in these places where changes happened finally melted into one unified habit; however, because of the gargantuan size of the country, the melting result are two different eating habit in southern China and northern China instead of one habit for the whole country, and they are different in three ways: …show more content…

In south part of China, where water resources are plentiful, is suitable to plant rice which need to be planted in water. In addition, temperature in south is warmer than north, and it will not drop under zero Celsius in autumn or winter, which means farmers can plant seed of rice in the field in autumn and receive the second time of harvest in winter. Because of the fast grown speed of rice and the suitable weather for it, southern residents eat more food made by rice. Take the traditional staple food in south as an example, traditional staple food in southern China are rice, which is popular in most of province in the south, and rice noodle, which are traditional food of Yunnan province and Guangxi province. The northern China, in other hand, has more staple food made by wheat. Compare to rice, wheat has a slower grow speed with a larger production, which perfectly fitted the weather in north part of China, whose weather is totally differ from south. In ate autumn and winter, temperature in northern China never go above zero, and people had to stay at home in the past. Based on this background, wheat is an excellent material to make staple food, for its large production, and the staple food made by it are easier to preserve than rice. In southern China, people are used to cook more steamed cuisines. It is not difficult to find out this fact because most of famous cuisines in south are steamed; for example, card past with meat, which is a popular traditional dish in southern China, is basically steam meat balls with crab meat; besides, another popular dish in south named braised shredded chicken with ham and dried tofu is cooked by put dried tofu and chicken meat together, then steam them with ham in the pot. The reason of it is the climate in south is hot and wet, and people believed them can live longer by sweat, which eat more steam dished will help them to do so. In contrast, people live in the north cook more fried food. Take some famous cuisines as example, the first one is fried boiled pork, everyone can know the way to cook it is to fry pork with sauce from its name. Another popular dish in north China is stir-fried pork fillet with rich soy bean sauce, mushroom, and onion; still, like what its name described, this cuisine is cook by fry pork fillet with mushroom and onion. People live in the north like to eat fried food can due to the weather in north, which is cold and windy, is different form south, and people need more calories to keep body temperature.
