Coconut oil is edible oil used in cooking, baking and frying, and applications including medicine and industry. Since coconut oil contains more saturated fat, therefore it is solid at room temperature. Coconut oil is extracted from the coconut shells of the palm trees using fire, sunlight or kiln. It is estimated that 1440kg of coconuts produce 70 liters coconut oil. Coconut oil is stable and nonvolatile oil, thus has a long life. As it has been mentioned before in the report that due to presence of saturated fats and misconceptions and lack of knowledge about saturated fats, coconut oil was advised to consume less in diet. However, with the increase research and its sharing, now coconut oil is termed as miracle oil and is used as a super food daily. This is due to examining the results of the medium chain fatty acids that makes up saturated fats in the coconut oil digestive which are easily broken down into vital nutrients in the liver. Pure coconut oil is extracted from the shell of coconuts. The meat present in the shell of the coconut undergoes either through the wet milling process or through the drying process. The most common method for the extraction of coconut oil is a quick drying method. This method first promptly dries the meat and is mechanically express to extract oil. Whereas, wet milling extraction method involves expression of coconut milk from the fresh coconut meat. The coconut oil is then extracted by separating from the milk using enzymes or centrifuge. These two extraction processes are quick and doesn’t involve exposure to high heat levels. Therefore, the flavors and odors of coconut oil retain.
