Carrots and cream cheese, those are not the cravings of a mad woman in her third trimester, those key ingredients are needed to create carrot cake. What is carrot cake you ask? Why it’s an old-fashioned favorite! Mildly spiced, made with fresh shreds of carrots and toasted walnuts, filled and frosted with a soft cream cheese buttercream. Finished with a sprinkle of toasted walnuts and you have heaven in your mouth. You can easily buy a box of carrot cake mix at any local supermarket, but the question is, will it be as spectacular as a home made cake? No, you now have to measure and blend, all the ingredients to make the batter. The batter should consist of all the ingredients carefully mixed and measured to exact quantities. Baking recipes must be exactly followed because baking is a science where you must follow instructions specifically, otherwise it won’t come out right. If the ingredients are not measured you might end up creating a disaster. A carrot cake consists of the following; 2 cups of all purpose flour, 2 teaspoons of baking soda, 2 teaspoons of. baking powder, ½ teaspoon of salt, 1 cup of granulated white sugar, 1 cup of packed brown sugar, 3 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg, 4 eggs, 1 1/4 cups of oil, 2 teaspoons of vanilla extract, 3 cups of grated carrots and ½ a cup of walnuts, finely chopped. The ingredients for the cream cheese frosting are; ½ a cup of softened butter, 2 cups of confectioners’ sugar, 1 teaspoon of vanilla extract and ½ a cup of coarsely chopped walnuts for decorating purposes. All of the dry ingredients should be sifted. Sifting aerates the flour. This will alter the texture of the cake, resulting in a lighter, airier fluffy texture, sifting also removes clumping that these dry ingredients may have.
