Carrots and cream cheese, those are not the cravings of a mad woman in her third trimester, those key ingredients are needed to create carrot cake. What is carrot cake you ask? Why it’s an old-fashioned favorite! Mildly spiced, made with fresh shreds of carrots and toasted walnuts, filled and frosted with a soft cream cheese buttercream. Finished with a sprinkle of toasted walnuts and you have heaven in your mouth. You can easily buy a box of carrot cake mix at any local supermarket, but the question is, will it be as spectacular as a home made cake? Baking recipes must be exactly followed because baking is a science where you must follow instructions specifically, otherwise it won’t come out right. If the ingredients are not measured you might end up creating a disaster. A carrot cake consists of the following; 2 cups of all purpose flour, 2 teaspoons of baking soda, 2 teaspoons of. baking powder, ½ teaspoon of salt, 1 cup of granulated white sugar, 1 cup of packed brown sugar, 3 teaspoons of ground cinnamon, 1/2 teaspoon of nutmeg, 4 eggs, 1 1/4 cups of oil, 2 teaspoons of vanilla extract, 3 cups of grated carrots and ½ a cup of walnuts, finely chopped. The ingredients for the cream cheese frosting are; ½ a cup of softened butter, 2 cups of confectioners’ sugar, 1 teaspoon of vanilla extract and ½ a cup of coarsely chopped walnuts for decorating purposes. All of the dry ingredients should be sifted. Sifting aerates the flour. This will alter the texture of the cake, resulting in a lighter, airier fluffy texture, sifting also removes clumping that these dry ingredients may have.
