According to Dunbar and Verdi (2014), carbohydrates have the largest impact on glucose levels. Foods such as fruits, starches and dairy products need to be limited but are not off-limits. There is no set amount of carbohydrates that is best for all individuals with diabetes. The proper amount varies for individuals depending on weight, medications and the type of diabetes a person suffers from. Glucose levels are affected by what a person eats, how much one exercises, hormones and even stress. There are three different types of carbohydrates; starches, sugars and fibers. Fiber is the indigestible part of plant food. Foods that are rich in fiber include fruits, vegetables, whole grains, nuts and legumes. Animal products contain no naturally occurring fiber. (Dunbar & Verdi, 2014) While carbohydrates can significantly increase blood glucose levels, a high fiber diet can help maintain a healthy glucose reading. Diabetics should choose non starchy vegetables such as leafy greens, tomatoes, carrots, cucumbers and asparagus. Fresh, frozen, or canned fruits without any added sugars are also a great choice for the type 2 diabetic. Diabetics have often believed that they must stay away from fruit because of the natural sugar found in fruit, however, this is not true.
Whole grains such as, 100% whole wheat bread, brown rice, oatmeal and whole grain barley are some of the best food choices for a diabetic. Cucumber salad, steamed broccoli, roasted Brussel sprouts, steamed green beans and grilled eggplant are some wonderful food ideas that are both tasty and healthy for the diagnosed diabetic. Protein can be found in every cell within the body and is needed to build and repair tissues, muscles, organs, bones and skin. Protein is also needed to make enzymes and hormones which are essential to the body. Plant based proteins are much lower in unhealthy fats and provide that much needed fiber. The best animal sources for protein are fish, low-fat dairy, egg whites, cottage cheese, chicken, turkey and lean pork. It is important to consume the recommended amount of protein daily.
