Rate of Fermentation Problem set: Plan an investigation to find out what increases the rate of fermentation. Scientific knowledge: Yeast Yeast is a microorganism which grow by feeding on sugars. In food manufacture, yeast is used in fermentation and leavening. The fungi feed on sugars, producing alcohol (ethanol) and carbon dioxide. The carbon dioxide is used in beer and wine manufacture.

A dough containing sugar is a nutrition for the yeasts and it excretes the carbon dioxide after consumption. When the ingredients are mixed fermentation occurs in which the yeast cells break down the large starch molecules into sugars for nutrition. It is required for survival and reproduction, and then, yeast excretes carbon dioxide and ethyl alcohol into the oxygen bubbles in the dough. However, if too much of the yeasts are added, it will produce more gluten and the dough may collapse while baking. Another famously known example is alcoholic drinks.

The yeast then turns sugars in the malt to alcohol which is called fermentation. In comparatively recent times, hops began to be added to boiling wort. Hops is resposible for the bitter flavour and the characteristic aroma of beer. The brewing process consists of several important steps: 1. Malting Brewing can use barley, corn or wheat as its main ingredient.
