Brown the meat well with oil in a heavy skillet. Remove meat from the pan. Using the same pan, sauté the onion, garlic and pancetta for at least ten minutes. Pour in the wine all at once to deglaze the pan. Stir in tomato paste. Add cans of tomato sauce as needed, pepper flakes, and all the herbs, stirring well to incorporate. Return the meat back to the pan and season with salt and pepper. Simmer for 3-4 hours or place everything in a crock pot for 8 hours on high. Shred meat at room temperature and add back to sauce. Serve over creamy polenta.
Freezes well.

Daniel’s father, the original “Big Papa”, started the family winemaking tradition in Chicago, making wine with an old winepress and selling jug wine out of their brownstone basement.

In Chicago, Daniel’s family cooked for their neighborhood every Sunday, requesting that each guest bring his own fork. Today Daniel and Helen carry on the tradition of cooking for gatherings but now they provide the fork!

The Ferrelli’s know the art of entertaining, it does not have to be perfect to be an absolute perfect gathering. Fork, no fork, what is most important is great conversation, ambiance, laughter, good food and great wine.

In America today, many have stopped the tradition of gathering for a meal, due to stress and time. But, you really do not need to turn a small dinner party into an event where you become the “bridezilla” hostess, because you are trying to have a little Martha Stew...
