Every day, more and more groceries and health food stores stock gluten-free products. That’s good news. New research proves that gluten can cause inflammation in any organ and any cell of your body (Pillow). Inflammation is the body’s biological response to injury; it is a defensive immune response that causes increased blood flow to an area. This inflammation may trigger swelling, pain, and loss of movement in joints. Under normal conditions, inflammation is a healthy response, the body is guarding itself from additional injury, restoring existing injuries, and maintaining healthy tissue. In contrast, inflammation can be dangerous if it never stops, if it acts against your own body and targets healthy tissue or if it is too extreme (Bronski 40). Organ and cell damage is a very serious problem and should be addressed immediately. When someone is allergic to peanuts, they completely avoid all relevant foods. Gluten is no different. It is important to be aware of the nonvisible signs of a gluten allergy so people can address them just as they would any other allergy.

There are two types of glomerulonephritis—acute renal failure (ARF) and chronic kidney disease (CKD). Although, it can also brings social challenges as well. The availability of strictly gluten free foods have increased dramatically over the last few years. But, a struggle that many people face is the difference in taste in some of the foods. Gluten is a protein found in common grains such as wheat, barley, and rye. Those affected with allergies to these foods (the most serious allergy being Celiac Disease) must follow a strict gluten-free diet in order to experience relief from their symptoms. Despite eliminating the ingestion of the allergen, gluten-free individuals begin to suffer from adverse side effects. In recent years, many Americans have begun to live an entirely gluten-free lifestyle with no medical necessity to do so. Many believe it to be a healthier diet, and even more believe it is an effective weight-loss tool. With this growing fad of adopting a gluten-free diet, under the false pretenses of varying health benefits, many Americans are exposing themselves to unnecessary health risks, over-priced and narrowly available foods, and an overall depletion of dietary needs.
The reason I chose this topic is because my younger brother was diagnosed with this disease in 2002, and I find it very interesting and how it is well known now compared to 12 years ago when it was rare and there were hardly resources and the amount of people diagnosed and to find gluten free food and restaurant they are able to prepare gluten free foods. The whole concept of this paper is to understand what celiac disease is about and what are the new scientific studies that have come along currently.
