Corny Tortillas
What you need:
2 cups cornmeal (Masa Harina works best)
1 ½ cups warm water
¼ teaspoon salt
What you do:
1. In a medium bowl, mix together cornmeal, water, and salt until dough isn’t sticky. (If it’s too sticky, add more cornmeal; if it’s too dry, add more water.)
2. Form dough into golf-ball-sized balls and pat with your hands to form paper-thin, 6-inch rounds. Place tortilla on hot, lightly oiled griddle and cook until brown. (Your tortilla isn’t crispy yet, but you can still eat it. Spoon some dip on it and then roll the tortilla up to eat it!)
3. Preheat the oven to 350 degrees.
4. Place the cooked tortillas on a cookie sheet and brush each one with oil. Then cut them into strips with a pizza cutter.
5. Bake for about 5-10 minutes or until crispy.
6. Once the chips have cooled a bit, dip them into the Anasazi bean dip and enjoy!

A quesadilla can be an easy and low costing college meal. Ingredients needed to make are two tortillas, corn, tomato, shredded cheese and refried beans. First, take two tortillas out of the package and butter thoroughly. Next, grill the tortillas on the George Foreman grill. This will make the tortillas crispy. After you’re done grilling put on toppings of corn, tomato and cheese onto a tortilla. Then, put the other tortilla on top of the toppings and put the quesadilla back onto the grill. Finally, take the quesadilla off the grill and put refried beans on the side. Sprinkling cheese on top of the refried beans will make a delicious dip. Have fun eating your cheap, but tasty quesadilla!

This is how you wrap up a proper tortilla! First, you start off by putting the meat you desire in your tortilla. Then add caramelized onion, salsa, and proceed to fold it in half. The trick to finishing it off is sprinkling a touch of lime juice on top of it, folding the bottom part of the tortilla into two small triangles inward, and ensuring the food does not fall out.” The overall product of her finished taco was mouthwatering. My olfactory senses were going crazy with intricate details of carnita, salsa, limes, and onionwithin arm length of me. I felt the need to enquire about where she obtained this recipe for this meal that I had never seen before. She went on to discuss in depth about how her grandmother’s mother used to sell carnitas on the street of Mexico. That her carnita tacos were bringing in so much revenue that she was able to open her own restaurant! She also mentioned how the recipe for preparation has been passed down generation to generation with the expectation to cook it to

You first need to mix up your ingredients for the dough, of course. Make sure that the dough is not so moist that it will stick to your pasta maker. Also, make sure that the dough is not too dry, or it will fall apart when it comes out. Mother thing that makes it easier when using this pasta maker is to have two people working it. One will need to hold on to the dough and feed it in while another turns the crank to make sure that the dough does not try to bunch up and get clumpy. Do this a little at a time so that you can straighten the dough as it comes out so that there is not just a big lump of clay at the end of the process. All in all, it is a very simple process even though it is a bit easier with two people working together.
