It is well-known that the number and occurrences of diet related illnesses is rapidly escalating. What I find fascinating is unlike other diseases, the cause of these conditions can be a simple cure. By adopting a healthy lifestyle, food choices act as medicines in the prevention, treatment and reversal of illnesses. Food should be society’s prescription for wellbeing. Science is the subject I’ve always possessed a passion for, with Biology being my favourite subject throughout high school. After developing secondary lactose intolerance in 2012 my broad interest soon became catalysed in a specific area. My new dietary needs meant I was constantly checking food labels, increasing my awareness of what products contained. I began searching causes and apparent cures along with learning about lactose intolerance in AS biology. Articles captured my attention on the benefits that specific ingredients had on the human body. My curiosity lead me to purchasing chia seeds, goji berries and ginkgo biloba to see if I’d experience any noticeable differences or if positive reviews were due to psychological effects by the cleverly marketed packaging. I crave the knowledge to understand and the ability to judge the truth behind these claims. Watching the lecture ‘Sugar: The Bitter Truth’ I was introduced to high fructose corn syrup which causes leptin resistance, so the brain fails to control food intake leading to weight gain or obesity. With obesity and diabetes reaching new levels it made me question how the use of such an ingredient can be justified when there are less controversial alternatives. I began noticing the importance of certain vitamins and supplements and the direct positive effects. Dr Alex Richardson‘s, work on how omega 3... ... middle of paper ... ... Appeal charity shop at the Countess of Chester Hospital and at the start of this year I was offered a part time job there. It has provided me with an insight into working life in a hospital environment, allowed me to gain communication skills and confidence, and has given me a sense of responsibility. I have the desire to gain valued knowledge and experience which will allow me to be at the forefront of nutritional research which is growing rapidly more important every day. By contributing to this research I want to make my chosen university proud and to help the public improve the quality of lives. I am a highly committed and hardworking student with high aspirations for the future this is why university is the ideal place for me. I am keen to work hard for a subject I am so passionate about and determined for success and to reach my aspiration of a nutritionist.
