The Tex-Mex cuisine is a melting pot of Native American and Spanish cuisines. In the article, “Tex-Mex Foods,” Joe Graham states that Native Americans who first lived in Mexico ate foods like corn, beans, tomatoes, peppers, and wild game. When the Spaniards came to South America, they introduced new fruits and vegetables along with cattle and wheat. As Europeans continued to settle in Mexico, these cultures began to mix to create a new cuisine (Graham). In the article, “Tracing the History of Tex-Mex,” Sarah Pruitt states that the name “Tex-Mex” was first introduced in the 1920’s describing tejanos, or Mexicans living in Texas.
