Allergies are never a positive experience no matter what types of sensitivities a person might be suffering from. Food allergies in my life are what have allowed me to understand what it means to suffer from allergies. Although I didn't find out until I was in my early twenties what the actual effects of my allergies were in my body, through more knowledge and understanding I now know that the causation of my allergies are within my control. I remember the day quite vividly when the Dr. told me that I needed to change my diet in order to have relief in my life. This encouraged me to explore working with people who also suffer from allergies, to pursue at that time a nutrition degree which would allow me to help educate others about what foods might be causing their bodies to react negatively. However, when I started through the process of working towards a nutrition program, it was essential for me to take a chemistry series that within it required a quarter of general, organic, and biochemistry. I chose this topic because it is something I knew of and have seen before, but never really knew much about it. All sorts of food allergies affect eight percent of children and two percent of adults in the United States. Allergic reactions happen because one's immune system overreacts to regular foods that are ordinarily harmless to the general population (7). An allergy affecting many children and adults recently in the United States is an allergy to peanuts. In the last few years, tremendous amounts of people have developed this allergy, which seems, in most cases, to be very severe.

Celiac is an autoimmune disorder that can be genetic. It is triggered when consuming a protein called gluten, which is mostly found in wheat. When gluten is consumed by a person that has this disorder, their immune system starts to attack by damaging the villi of the small intestine. When the villi is even a little bit damaged, it can become hard for the body to get all of the nutrients in the bloodstream, which can lead to malnutrition. When most people think of allergies, they might think of the common allergies like grass, dust, cats, and dogs. However, more and more children are not just allergic to the common allergies but children are allergic to food. Food? Really? Yes, more children are allergic to food. However, the most food that child are allergic to are cow’s milk, eggs, peanuts and tree nuts, soy and wheat and gluten.
I would then like to work in the field of dietetics at a hospital. I have been passionate about pediatric nutrition since I began my academic career in nutrition four years ago. I believe that with Lenoir-Rhyne’s emphasis on this topic it will help me work towards my career. After working for several years I would like to further my education by completing a Master of Science in Nutrition. During my time as an undergraduate student I have worked as a tutor of many courses including nutrition. After completing a nutrition course, I was amazed by the impact that nutrition has on the human body. I am inspired to explore the field of dietetics which is very broad and dietitians perform a variety of functions in their jobs. As a dietitian, I can work in a wide variety of positions such as a foodservice manager in commercial or institutional, a community nutritionist, such as the WIC and Headstart, a consultant to major food corporations such as Kelloggs and Kraft or go into sales. I am very interested in working in a position where I can help people develop habits to improve their health. I may eventually go on to graduate school to advance my knowledge of dietetics.

Anaphylaxis is when an individual becomes severely allergic to any given allergen in the environment, for example a food such as peanuts. When children are young they want to be like everyone else and fit in the same way. In this case, fitting in is eating cake or cookies with everyone else. Another issue that may arise is anxiety, from the pressure of feeling what it was like to experience anaphylaxis and be rushed to a hospital. At such a young age, that experience can be troubling for years to come. People may often get depressed if they are constantly unable to eat the food they want to. Imagine a child always picking up food and reading, “May contain nuts”. Always being turned down could cause a sadness and depression, leading to an odd temperament (Mondello, 2009).
What is a food allergy? The body’s immune system is responsible for identifying invaders (like bacteria and viruses) and triggering a response to fight the infection. With IgE-mediated food allergies, the body sees the protein in some foods as a dangerous invader and attempts get rid of it. To do this, the immune system produces antibodies called immunoglobulin E (IgE). This triggers the release of histamine into the blood. Histamine is responsible for causing the allergic reaction in the body. For some people, the reaction may be mild, but for others even a tiny amount of the allergen can cause a serious reaction.
