Fajita and taco seasoning are two spice blends that both have their origins in Mexican cuisine and are combinations of the most widely used Mexican spices. The first thing to note is that fajita seasoning and taco seasoning are more alike than they are different. The main difference has to do with their respective levels of acidity. Fajitas are made from skirt steaks, which are naturally tough. In order to soften them, Mexican cooks often use a source of acidity to help break down the muscle fibers. In traditional fajitas, that acidity comes from the use of lime juice to marinate the meat. In the beginning, Burciaga provides a brief history when Taco Bell was established. First starting in Mexico City and then spreading throughout the United States, the chain sold “mild imitations of the real thing” (382). Many Mexican businesses and people protested against Taco Bell because unlike homemade tortillas made from hand, they used “prefabricated hard tortilla shells” (383) that tasted nothing like real Mexican tacos. Additionally, the restaurant also combines food and makes up names so that it appears different. From Enchiroto, a combination of a burrito and enchilada, to Cinnamon Crispas, known as bunuelos, Burciaga points out that “the Taco Menu can be a mystery if one is not familiar with the renamed food items” (383).

Coming from a mexican culture, I am blessed to have a rich variety of traditional delicious home made recipes. Most people my age always salivate to the idea of their grandmothers making that amazing dinner. Mostly all americans can agree on the superb taste of the mexican food, and one of my favorites and most traditional of them all is the famous “Mole sauce”. It is made on special occasions such as birthdays, christmas, new years, and teenagers first communion at the church. This complex dark red spicy/sweet sauce has a legend behind its creation. It is believed in the mexican culture that it was made for the first time at the Convent of Santa Rosa in Puebla early in the colonial period. The convent nuns went into panic one day as they found out the archbishop was paying them a visit and they had nothing to prepare for him due to lack of wealth. The nuns prayed and put together the scraps of ingredients that they had left including chilli peppers, day old bread, nuts, some chocolate and spices. After they killed a turkey, cooked it and served it with the sauce on top, the archbishop fell in love with the dish. They asked the nuns about the dish and they responded truthfully with “I made a Mole” which is the anctient word for mix in spanish. There is also a few variations of this sauce within the mexican community, but the one I will be instructing you how to make is the traditional recipe that my grandmother learned from her grandmother; Mole poblano.
Chipotle’s cuisine is Mexican. Their menu consists of burritos, tacos, burrito bowls, and salads prepared with fresh ingredients employing classic cooking methods. The customer proceeds down an assembly line choosing the various components of their meal as they proceed. They have recently created a children’s menu offering smaller portion sizes. They offer three types of meats: chicken, beef, and pork. Condiments include fajita vegetables, rice, two types of beans, four different salsas, sour cream, cheese, guacamole, and lettuce.
Cuban cuisine has been influenced by Spanish, French, African, Arabic, Chinese, and Portuguese cultures. Traditional Cuban cooking is primarily peasant cuisine that has little concern with measurements, order and timing. Most of the food is sauteed or slow-cooked over a low flame. Very little is deep-fried and there are no heavy or creamy sauces. Most Cuban cooking relies on a few basic spices, such as garlic, cumin, oregano, and bay laurel leaves. Many dishes use a sofrito as their basis. The sofrito consists of onion, green pepper, garlic, oregano, and ground pepper quick-fried in olive oil. The sofrito is what gives the food its flavor. It is used when cooking black beans, stews, many meat dishes, and tomato-based sauces. Meats and poultry are usually marinated in citrus juices, such as lime or sour orange juices, and then roasted over low heat until the meat is tender and literally falling off the bone. Another common staple to the Cuban diet are root vegetables such as yuca, malanga, and boniato, which are found in most Latin markets. These vegetables are flavored with a marinade, called mojo, which includes hot olive oil, lemon juice, sliced raw onions, garlic, cumin, and little water.
Cultural Difference between Mexicans and Americans While Texas leader Stephen Austin initially had no contempt toward Mexicans, the Anglo-American citizens in the area did. The American Texans of the 1800’s defined Mexicans as “a race alien to everything that Americans held dear” (De Leon 4). This sentiment would serve as the primary catalyst to the Texas secession from Mexico. When Austin began colonizing the area, he envisioned a place in which Anglo-Americans and Tejanos, Mexicans living in Texas, could live together. Eventually, though, the public opinions of North American settlers in the territory and in Washington would make him realize that the goal of unity between the two groups was impossible.
Firstly, one aspect that is both Mexican and American is the cuisine. The original food for Mexico is very spicy and most of the time very colorful as well. Mexicans use spices, peppers, tomatoes, and cheese in many of the native dishes. They use an assortment of meat: pork, beef, lamb, and chicken. When Mexican restaurants spring up in the United States the food is toned down to appeal to Americans. The Mexican Americans use less spices to make the dishes milder rather than the hot, spicy native food. The food, still Mexican, takes on the likeness of American food. This is shown in the United States by all of the Mexican American restaurants such as Taco Bell. Therefore Mexicans have Americanized their food. “For Hispanics live on this side of the border, where Kraft manufactures Mexican-style Velveeta, and where Jack in the Box serves Fajita Pita.” (Rodriguez 131). Americans complement the Mexican style and the inverse.
Mexican food is influenced by the ancient civilization. For examples the Mayans ate corn tortilla with a bean paste that covered the tortilla. The Aztec found out that mixing and squishing different types of vegetables makes a savory appetizer they call salsa. They also learned how to make what are now called tamales. When the Spaniards came they brought over milk, rice and other products that were new to Mexico. But have now remained in the cuisine.
The rich warm smells of Mexican spices permeate our house during every season. Family and our Mexican culture is an issue that is important to my family and me. I was born and raised in the United States; however I am still deeply rooted in my Mexican culture.
Tradition has been said to mirror a way of life. Observation has concluded that participants in tradition “actively construct as well as reflect culture and community” (Sacks 275). For most people in the 21st century, tradition only reveals itself during special times or certain seasons. For others it is simply a way of life. The foodways of Mexicans and Native Americans are of particular interest in this study because of the food that grew from necessity and is maintained as sacred or reserved for only special occasions. The tamale is one such food. Significantly changed and altered throughout history it has remained a food of commonality and prestige at the same time. The tamale represents a nation that thrived as a people and has continued to live on through the traditions created hundreds of years ago by women who strive to better their community, their men, and the general way of life and welfare of their people. Native American people are the backdrop of southwestern history and as such we often look to them for answers regarding the past. The ‘past’ provides acts as vault filled with a wealth of information concerning a great number of cultural artifacts.
This research project is focused on how food exists to not only help us survive, but also for helping to create and shape identities, especially the national identity for Mexico. I will approach this topic primarily through a discussion on the formation of Mexican cuisine, but also about how food tells us stories about history, art, tradition, globalization, authenticity, and on gendered food identities, particularly on the role of women and their sense of empowerment through the evolution of Mexican cuisine. Mexico’s ethnic food was a part of their culture, but it became problematic when the Europeans brought with them a variety of new foods and looked at Mexican food as suspicious
Mexican food is usually spicy from peppers that grow in Mexico’s hot climate. The main foods that Mexico produces and make the main element of their dishes are beans, cactus, avocado squash and fruit. These are typically in every or on the side of every Mexican dish because this is home grown food that the Mexican choose to show off. In contrast Cuban food is less spicy than Mexican cuisine and Cuban cuisine isn’t usually fried. Cuban food also leans towards using their home grown food such as; rice being one of the main crops grown also plantains, bananas, mangoes, mamoncillos, and coconut and plenty more tropical fruit because of the tropical climate. For the Cubans it's almost mandatory to have a fruit or vegetable on the plate when serving.
What is culture? Many people ask themselves this question every day. The more you think about it the more confusing it is. Sometimes you start leaning to a culture and then people tell you you’re wrong or they make you feel like a different person because of your culture. I go through this almost every day. Because of the way I was raised I love Mexican rodeo but I was born and raised in Joliet. This can be very difficult trying to understand culture. I live in this huge mix of culture. Culture is personal. People can have many cultures especially in America and because of globalization. Cultural identity is not one or the other, it is not Mexican or American. Cultural identity is an individual relevant thing.
Burritos are more popular in states like in Sonora or Sinaloa, however something really popular in Mexico City are tacos. And not talking like the ones from Taco Bell, but actual tacos. Spain, the third largest country in Europe, has a strong history and diverse culture dating back to when the Iberians first inhabited the land. The country lies between the Mediterranean Sea and Atlantic Ocean and the land ranges from mountains to meadows. Over hundreds of centuries, many different civilizations have inhabited the land influencing the people there today. From the Visigoths and Celts to the Romans of the Middle Ages, Spain has received a rich history and background. One of the strongest of its cultures is the food. All of these cultures brought a particular type of food and combined and blended with the food that exists there today. Spain is very popular for olives, vineyards, and citrus fruit. Another well-liked food is garlic, including varieties of peppers and spices. Once spice specifically—golden saffron—is essential in many recipes, including the Spanish Paella. There are many distinguished Spanish foods that encompass the daily life and culture of the country.
