Stephen Boos has worked in the food service industry for over 30 years. He started as a bus person and subsequently trained as a chef’s apprentice. Steve’s mother believed that a college education was something that everyone should receive. She felt that a college degree was a good investment in Steve’s future. In 1976 at his mother’s insistence, Boos moved to Northeastern Ohio to attend Kent State University where he earned a bachelor’s degree in business administration. After graduation, Steve began working for East Park Restaurant as a line cook. Using his education as a foundation, Steve made a point to learn everything he could about running a restaurant, from cutting meat to the bi-weekly food and beverage orders. His versatility, keen business sense, and ability to control costs resulted in Steve’s promotion to General Manager, as role he has held since 1995.

While there are many neighborhoods in New Orleans, Gentilly is a large historical community. It is home to three universities. Dillard University, Southern University at New Orleans, and the University of New Orleans are located throughout the area (The Gentilly Neighborhood 1). The Cherokee Indians, the most cooperative and accommodating to the political institutions of the united states, suffered the worst fate of all Native Americans when voluntarily or forcibly moved west. In 1827 the Cherokees attempted to claim themselves as an independent nation within the state of Georgia. When the legislature of the state extended jurisdiction over this ‘nation,’ the Cherokees sought legal actions, not subject to Georgia laws and petitioned the United States Supreme Court. The case became known as Cherokee Nation vs. Georgia in 1831. Supreme Court Justice John Marshall denied their claim as a republic within Georgia, he then deemed the Cherokee as a ‘domestic dependent nation’. One year later through the case of Worcester vs. Georgia, the Cherokee’s were granted federal protection from the molestation by the state of Georgia. Through the Indian Removal act in 1830 President Andrew Jackson appropriated planning and funding for the removal of Native Americans, Marshall’s rulings delayed this for the Cherokee Nation, and infuriated President Jackson. Marshall’s decision had little effect on Jackson and ignoring this action the president was anxious to see him enforce it.
The challenging and interesting life of a Cajun is characterized by family, music, housing, food, wedding, and ?traiteurs?, just to name a few. Cajun life began in the 1700?s and still exists today. Though a bit has changed since the early Cajuns arrived, the culture is still thriving. Acadiana is the best place to have a taste of the true Cajun culture and forever will be a colorful part of history.
Cajun cuisine is a fusion of food from different regions with very rich histories, such as France, Canada, and the southern U.S. It was originated by peasants of French ancestry. These immigrants settled in the "Acadian" region of the Bay of Fundy in Nova Scotia from 1604 to 1654. By 1755, the population of these settlers had grown to about 15,000. They survived on cereal crops such as wheat, barley and oats, and garden vegetables including field peas, cabbage, and turnips. This diet was supplemented by domestic livestock, wild game, and fish. Cajun music has a folk-like beat that places the accordion at the center of the rhythm. Cajun music originated from the United States of America but more specifically, the state of Louisiana. This music came to Louisiana through the French-speaking immigrants that settled there. These immigrants once called the Acadians, or Cajuns, found a new home in Louisiana after being expelled from Nova Scotia (Ancelet). Due to their harsh exile from Nova Scotia, much of Cajun music describes death and desperation. Soon after arriving in Louisiana, the Cajuns began incorporating the sounds of the surrounding cultures into their music (Edmondson, 173). Acculturation contributed greatly to the origin and development of Cajun music due to its borrowing of sounds and instruments from a variety of different cultures. They started incorporating the Native American’s singing style as well as the Spanish guitar into their own original music (Ancelet). This created the unique sounds of Cajun music that we know and listen to today. Paired with their music, the Cajun culture also created their own unique Cajun dance style. For the last thirty years, Cracker Barrel Old Country Store, Inc. has been offering people on the highways of America an alternative to the fast food pit stop. Their restaurants serves home-style food, has quality gift shops and, most of all, a friendly and accommodating environment all go in to create a welcoming atmosphere. Making the guest comfortable is what makes them different. The waiters and waitresses let you take your time. You are seated and promptly drink orders are taken. They give the customer sufficient time to gaze over the menu. There are peg games on the table to occupy you or your young ones. If it is a game of checkers you wish, there is always a table in the corner ready to play.
If I were able to travel to anywhere in this world without worrying about expenses, I would travel to New Orleans; a Louisiana city that is located on the Mississippi River and is in close proximity to the Gulf of Mexico. New Orleans has a number of things to provide as to why I would travel there, but I only picked my main three that I mostly want to do. The first reason is for the unique and diverse culture New Orleans has to offer. The other two reasons are for the history and to witness the creepy side of New Orleans that it is most famous and known for.
